Curried Sweet Potato Soup

A delicious Thai inspired soup that is made very quickly in the Kenmore Heavy Duty Professional Blender. Fast, easy and delicious.

Ingredients

  • 4 medium sized sweet potatoes peeled
  • 1 small yellow onion sliced
  • 1 garlic clove minced
  • 1 can light coconut milk
  • 2 cups sodium-reduced chicken broth
  • 1 tsp fresh grated ginger
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp medium curry powder
  • 1 tbsp peanut butter
  • 1 tsp lime juice
  • Garnish with Coconut flakes and fresh cilantro.

Instructions

  1. Place sweet potatoes in a microwave safe dish, puncture with a fork a few times. Microwave on high for 5-8 minutes until tender when pierced with a fork.
  2. Place sweet potatoes, onion, garlic, coconut milk, chicken broth, ginger, cumin, coriander, and curry powder in a Kenmore Heavy Duty Professional Blender blending until smooth.
  3. Continue to blend on the highest setting for 5 minutes or until soup is hot throughout.
  4. Add peanut butter and lime juice and blend until smooth.
  5. Serve with garnish and fresh bread for a delicious meal.
