A delicious Thai inspired soup that is made very quickly in the Kenmore Heavy Duty Professional Blender. Fast, easy and delicious.

Ingredients
4medium sized sweet potatoespeeled
1small yellow onionsliced
1garlic cloveminced
1can light coconut milk
2cupssodium-reduced chicken broth
1tspfresh grated ginger
1tspcumin
1tspcoriander
1tspmedium curry powder
1tbsppeanut butter
1tsplime juice
Garnish with Coconut flakes and fresh cilantro.
Instructions
Place sweet potatoes in a microwave safe dish, puncture with a fork a few times. Microwave on high for 5-8 minutes until tender when pierced with a fork.
Place sweet potatoes, onion, garlic, coconut milk, chicken broth, ginger, cumin, coriander, and curry powder in a Kenmore Heavy Duty Professional Blender blending until smooth.
Continue to blend on the highest setting for 5 minutes or until soup is hot throughout.
Add peanut butter and lime juice and blend until smooth.
Serve with garnish and fresh bread for a delicious meal.
