French Toast Breakfast Bake

A delicious make-ahead french toast bake - perfect for brunch, lunch or a weekend breakfast.

  • Cooking spray
  • 1 loaf of crusty sourdough bread or any white crusty bread
  • 8 whole eggs
  • 2.5 cups Almond Breeze Vanilla Almond Beverage
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tbsp pure vanilla extract
  • Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp table salt
  • 1/2 cup cold margarine for dairy free or butter


  1. Day Before Directions:
  2. Spray 9" x 13" dish with cooking spray and set aside.
  3. Cut bread into cubes and arrange in the pan.
  4. In a separate bowl whisk together eggs, Almond Breeze, sugar and vanilla.
  5. Pour liquid mixture over bread.
  6. Cover and store in the refrigerator overnight.
  7. Morning Directions:
  8. Preheat oven to 350F
  9. In a medium sized bowl mix together flour, sugar, cinnamon, salt and margarine (butter) with a pastry cutter or hand mixer.
  10. Mix until mixture is crumbly and fully combined.
  11. Sprinkle over the bread mixture and bake for 50 minutes.
  12. Let stand 10 minutes then serve with fresh berries, margarine/butter and pure maple syrup.
