Instant Pot Butternut Squash Soup

Instant Pot Butternut Squash, Sweet Potato and Apple Soup (Vegan)

A delicious soup made in just 15 minutes! Packed with veggies and a perfectly smooth vegan soup great for lunch or dinner.

  • 1 Butternut Squash peeled, seeded and cubed
  • 1 Sweet Potato peeled and cubed
  • 1 White Onion cubed
  • 2 Granny Smith Apples or other firm apples
  • 1 can Light Coconut Milk (13.5 oz/398ml)
  • 900 ml Vegetable Broth
  • 1 tsp Curry Powder
  • 1/4 tsp Cinnamon
  • 1/4 tsp Ground Ginger
  • Ground Pepper pinch


  1. Prepare squash, sweet potato, onion and apples - set aside.

  2. Place coconut milk, broth, curry powder, cinnamon, ginger and pepper in Instant Pot.

  3. Add chopped vegetables to Instant Pot.

  4. Ensure vent is set to "steaming," close and lock lid.

  5. Using the soup button set time for 15 minutes on High pressure.

  6. Once cooking time is completed release steam, and open lid (remember it will be HOT!)

  7. Transfer to a blender to puree or use an immersion blender to create a smooth soup.

  8. Optional: top with pumpkin seeds and a drizzle of honey.

  9. Serve and enjoy.
