Black Bean Brownies

A delicious recipe for moist brownies made without sugar and flour. Sweetened with dates and applesauce.

Ingredients

  • 1 can black beans (16 oz) rinsed
  • 2 eggs
  • 11 Medjool dates pitted
  • 1/2 cup applesauce unsweetened
  • 1 tsp espresso powder (or 1/2 tsp ground espresso)
  • 1 tbsp vanilla
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.

  2. Line 9 x 9 dish with parchment paper

  3. In the blender add beans, eggs, dates, applesauce, espresso powder, vanilla, cocoa powder, baking soda, salt, and cinnamon.

  4. Mix until fully blended and smooth.

  5. Add 1/4 cup chocolate chips and mix.

  6. Pour batter into dish ensuring it's level.

  7. Sprinkle 1/4 cup chocolate chips over the top and bake for 35 minutes.

  8. Remove from oven and let cool on stove top.

  9. Once slightly cooled, lift out by parchment paper and place on wire cooling rack.

  10. Cool completely then cut into squares.
