Gluten Free Parmesan Crusted Chicken

Absolutely delicious chicken recipe. Juicy, flavourful and loved by the whole family.

Ingredients

  • 4 skinless boneless chicken breasts
  • 2 tbsp yellow mustard
  • 1 tsp dried parsley
  • 1 cup fresh grated parmesan I did mine on a microplane for a fine grate
  • 3/4 cup crusted Chex cereal
  • 1 tbsp Club House Garlic Plus
  • dash Tabasco
  • salt and pepper
  • cooking spray or parchment paper

Instructions

  1. Preheat oven to 450F
  2. In a small bowl mix together mustard, parsley, tabasco, garlic plus, salt and pepper. Set aside.
  3. In another small bowl mix together parmesan cheese and crushed cereal.
  4. Add the chicken breasts to the mustard mixture and coat both sides.
  5. Then place each breast in the cheese mixture until fully coated (press mixture into the chicken with your hands).
  6. Place each coated chicken breasts in a baking dish coated with cooking spray or lined with parchment paper.
  7. Bake until chicken is fully cooked - approximately 30-40 minutes depending on thickness of the chicken breast.
  8. Serve with your favourite sides.
  9. Cover any leftovers and store in the refrigerator. They are delicious cold sliced over salad.
