Clementine Mini Tarts

These delicious Clementine Mini Tarts are perfect for entertaining and easy to make.

Ingredients

  • 6 Mini Graham Cracker Pie Crusts
  • 4 oz softened Cream Cheese
  • 1/4 cup Sugar
  • 1/4 cup pureed Clementine segments about 1 1/2 Clementines
  • 1/8 tsp Clementine Zest
  • 1 beaten Egg
  • 6-12 Clementine segments as garnish
  • 1/4 tsp Ground Ginger

Instructions

  1. Preheat oven to 350.
  2. Beat cream cheese and sugar until blended.
  3. Add egg and ground ginger and pureed Clementines and mix until blended.
  4. Place crusts on a baking sheet.
  5. Pour mixture into crusts.
  6. Bake 20 minutes.
  7. Cool for 20 minutes.
  8. Refrigerate at least 1 hour before serving.
  9. Top with whipped topping, clementine segments and zest for garnish.
