Slow Cooker Chicken and Black Bean Soup with Quinoa

A delicious and hearty soup filled with chicken, black beans, sweet potato and quinoa. Made in the crock pot so it's easy and delicious!

Ingredients

  • 4 cups chicken broth from a tetra pack
  • 2 cups chicken broth from bouillon
  • 2 chicken breasts boneless, skinless
  • 2 cups of hydrated black beans
  • 1 cup of quinoa rinsed
  • 3 cups cubed sweet potato peeled
  • 1 can diced tomatoes with Herbs and Spices 28oz
  • 1 tsp garlic salt
  • 1 tsp cumin
  • 1/2 tsp ground coriander

Instructions

  1. Place all ingredients in a crock pot and set on high for 4 hours or on low for 6 hours.
  2. Serve with chopped cilantro and a side of fresh bread.
  3. Portion out leftovers and freeze for later.
