Quinoa salad is one of my favorite lunches. \u00a0Filled with protein and perfect for an on-the-go filling lunch. \u00a0And you can pack a whole host of vegetables to create a one of a kind quinoa salad. Quinoa Salad with Chili Lime Dressing is a perfect make-ahead meal or dish. You will love the combination of flavors and the healthy portion of protein in this delicious vegan quinoa salad recipe.<\/p>\n

Vegan Quinoa Salad Recipe<\/h2>\n

Quinoa Salad Recipe Ingredients:<\/strong><\/p>\n

3 cups cooked quinoa (we used multicolor)
\n1 tsp lime zest
\n1\/4 cup freshly squeezed lime juice
\n1 tbsp soya sauce
\n1 tbsp liquid honey
\n1 tbsp Thai sweet chili sauce
\npinch of salt
\n1 can Hearts of Palm or Water Chesnuts
\n1\/5 cups cooked asparagus (ensure it’s tender-crisp and cooled)<\/p>\n

Quinoa Salad Recipe Directions:<\/strong><\/p>\n

Cook Quinoa: Bring 2 cups of water to a boil then add 1 cup of quinoa and return to a boil. Reduce heat to low, cover and simmer until tender (about 15 minutes). Remove from heat and let stand 5 minutes.<\/p>\n

Dressing: In a bowl whisk together lime zest, lime juice, soya sauce, honey, chili sauce and a pinch of salt.<\/p>\n

Add sliced hearts of palm, quinoa, and asparagus, top with dressing and combine.
\nChill 1 hour or overnight.
\nKeeps fresh for a few days in an airtight container.
\nAdd more lime juice to salad to freshen it up before serving.<\/p>\n
