I love the flavours of Thai cooking and this soup has a lot of them. \u00a0It started off as a way for me to use the vast amounts of kale we have from our CSA farm share, but then it turned into a delicious combination of flavours and aromas.<\/p>\n

One of the greatest mistakes that people make when creating soup is that they don’t allow enough time for the flavours to simmer. \u00a0I cook my soups for longer than many ensuring a deep, rich combinations of flavours.<\/p>\n

Curried Butternut Squash and Kale Soup<\/h2>\n

\"curried<\/a><\/p>\n

Ingredients:<\/h3>\n

2 tbsp olive oil<\/p>\n

1 medium onion, diced<\/p>\n

2 cups sliced celery<\/p>\n

1 tsp minced garlic<\/p>\n

2 tsp finely minced ginger<\/p>\n

4 cups of cubed butternut squash (or sweet potatoes)<\/p>\n

2 cups of chopped apple<\/p>\n

1 heaping tbsp of curry powder<\/p>\n

1 tsp cinnamon<\/p>\n

2 tsp salt<\/p>\n

1.5 tbsp brown sugar<\/p>\n

5 cups of water<\/p>\n

Can of light coconut milk<\/p>\n

2 tbsp smooth peanut butter<\/p>\n

1 bunch of kale, deveined and finely chopped.<\/p>\n

Cooked and ready for the blender<\/figcaption><\/figure>\n

Into the blender.<\/figcaption><\/figure>\n

Directions:<\/h3>\n

In a medium-large pot, heat oil over medium high heat. \u00a0Add onion and garlic and cook until onion is translucent. \u00a0Add ginger, spices, salt, brown sugar, apples and butternut squash. \u00a0Cook for a minute, stirring frequently.<\/p>\n

Add water, cover and bring to a simmer. \u00a0Cook for 1 hour on medium-low (simmer). \u00a0In batches, transfer to blender to puree. \u00a0Return to pot and add coconut milk and peanut butter. \u00a0Bring to a low boil. \u00a0Add kale and cook for another 5-10 minutes (until kale is tender)<\/p>\n

Tips:<\/h3>\n

Ensure you do not put any of the stock of the Kale in the soup. \u00a0It is bitter and requires more chewing than soup should. \u00a0Stip the kale leaves off of the stock and cut up into fine strips. \u00a0If you like your soup with a bit of spice, add 3-5 drops of Tabasco at the very end, just before serving.<\/p>\n","protected":false,"gt_translate_keys":[{"key":"rendered","format":"html"}]},"excerpt":{"rendered":"
