This soup is my own variation on a Martha Stewart<\/a> recipe for vegetable soup.\u00a0 I added V8 juice (which my grandmother always put in her vegetable soup), and\u00a0one of the key ingredients making this a\u00a0yummy, easy to make favourite in our house.\u00a0 This soup, topped with finely grated parmigiana-reggiano cheese = heaven, and, my go-to lunch. It is also fantastic to use up\u00a0any veggies in\u00a0your house that are getting close to\u00a0turn. \u00a0I also love that this soup is just as delicious in the summer as it is on a cold winter’s night.<\/p>\n

Vegetable Soup<\/h2>\n
    \n
  • 2 tablespoons olive oil<\/li>\n
  • 2 cups chopped onions<\/li>\n
  • 2 cups thinly sliced celery<\/li>\n
  • 2 teaspoons Basil, Parsley, and Garlic Pepper<\/li>\n
  • 1 can of V8 juice<\/li>\n
  • 1\u00a0reduced-sodium chicken broth 900ml<\/li>\n
  • 2 can (28 ounces) diced tomatoes, with juice\u00a0 <\/span>(using one can of \u2018herbs and spices\u2019 adds extra flavour)<\/li>\n
  • 8 cups mixed fresh or frozen vegetables, such as carrots, green beans, zucchini cut into pieces<\/li>\n<\/ul>\n

    1.\u00a0\u00a0\u00a0\u00a0 <\/span><\/span><\/span>Heat oil, onions and celery in a large stockpot. Cook, stirring frequently, until onions are translucent, 5 to 8 minutes. <\/span><\/div>\n
    <\/div>\n
    2.\u00a0\u00a0\u00a0\u00a0 <\/span><\/span><\/span>Add broth, tomatoes and their juice, V8, basil, parsley and garlic pepper; bring mixture to a boil. Reduce heat to a simmer, and cook, uncovered, 20 minutes. <\/span><\/div>\n

    3.\u00a0\u00a0\u00a0\u00a0 <\/span><\/span><\/span>Add vegetables to the pot, and return to a simmer. Cook, covered, until vegetables are tender.\u00a0 <\/span><\/div>\n
