My slow cooker is like a best friend that always helps me out.<\/p>\n

Whether it’s a dinner party, a weekday meal or food for a crowd it’s reliable and creates delicious meals with little effort.<\/p>\n

While I love a slow simmering soup on the stove this soup takes out all of the prep work and cooks the whole meal in one pot.<\/p>\n

While I have used olive oil to saute in the past I loved the change in flavor by cooking the onions in coconut oil. The delicious coconut flavor is sealed into the onions and spices and adds the perfect sweetness to the dish.\u00a0Plus with the addition of coconut milk, this Slow Cooker Butternut Squash and Apple Soup is creamy, delicious and lactose-free.<\/p>\n

Slow Cooker Butternut Squash and Apple Soup<\/h2>\n

Ingredients:\u00a0<\/strong><\/p>\n

2 tbsp Organic Coconut Oil
\n2 cups chicken stock
\n1 Butternut Squash, peeled, seeded and cubed
\n2 Carrots, peeled and sliced
\n2 Apples (I used Gala)
\n1\/2 large white onion, roughly chopped
\n1\/4 tsp fresh ground pepper
\n1\/2 tsp cinnamon
\n1\/2 tsp ground coriander
\n1 tsp cumin
\n1 can Organic Coconut Milk
\n1 tbsp lemon juice
\n2-3 drops of Hot Pepper Sauce
\nTop with Coconut Chips<\/p>\n

Directions:<\/strong><\/p>\n

Place coconut oil in a pan to melt. Add in onion and saute until onion becomes translucent.
\nPlace all ingredients in the slow cooker and cook on high for 4 hours or low for 6 hours.
\nBlend in a Vitamix or use an immersion blender.
\nTop with Grace Foods Coconut Chips.
\nServe with fresh baguette or alongside your favorite Fall\/Winter meal.<\/p>\n
