Since we had no dinner plans I asked if my husband would make a recipe I had been eyeing in a new cookbook, Williams Sonoma&#8217;s <a href=\"http:\/\/www.amazon.ca\/Weeknight-Fresh-Fast-Williams-Sonoma-Healthy\/dp\/1616280573\/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1344206938&amp;sr=1-1\" target=\"_blank\">Weeknight Fresh and Fast<\/a>.\u00a0 I have professed my<a href=\"http:\/\/familyfoodtravel.blogspot.ca\/2012\/08\/white-bean-and-kale-soup.html\" target=\"_blank\"> love<\/a> for <a href=\"http:\/\/familyfoodtravel.blogspot.ca\/2012\/05\/kale-qunioa-and-cranberry-salad.html\" target=\"_blank\">Kale<\/a> a few times before but this is another way to use this versatile medium-high heat.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Add the pancetta(or bacon) and saut\u00e9 until beginning to brown, about 3 minutes. Meanwhile, in a small bowl, add the eggs and beat with a fork.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Mix in both cheeses and a generous amount of pepper.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Remove 1\/2 cup of the pasta cooking water and reserve.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Drain the pasta.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Reheat the pancetta mixture, and then remove from the heat.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Add the spaghetti and kale to the skillet.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Gradually whisk 1\/4 cup of the reserved pasta cooking liquid into the egg mixture. Add the egg mixture to the skillet and stir until the egg mixture coats the pasta and is creamy, not wet and runny.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">If the egg mixture does not become creamy, set the skillet over very low heat and stir constantly just until the egg mixture becomes creamy, watching carefully (do not boil).<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Immediately remove the skillet from the heat.
