On busy mornings it’s so great to have a healthy breakfast that can be heated quickly or grabbed on your way out the door.<\/p>\n
I’ve been experimenting with easy breakfast ideas\u00a0<\/a>from muffins<\/a> to a quinoa breakfast bowl<\/a>\u00a0and love the variety that these delicious recipes provide.<\/p>\n This new recipe for Freezable Ham Egg and Feta Muffins is a new favorite and packed with protein. Plus you can customize what you put in there.<\/p>\n Fill it with your favorites and freeze for easy breakfasts. If you prefer to use fewer eggs, you could add some milk to the recipe but I recommend making it this way as the taste is superb.<\/p>\n <\/p>\n Makes 12 muffins.<\/p>\n Ingredients:<\/strong><\/p>\n 12 eggs Directions:<\/strong><\/p>\n Preheat oven to 350C <\/p>\nFreezable Ham Egg and Feta Muffins<\/h2>\n
\n1 cup chopped ham
\n1\/2 cup deveined, chopped kale
\n1\/4 cup crumbled or sliced feta
\n1 tsp fresh ground pepper
\n1\/4 tsp Tabasco
\nButter or non-stick cooking spray
\n12 Muffin tin<\/p>\n
\nGenerously spray a muffin tin (sides and top) or grease with butter.
\nIn a large bowl beat together eggs, pepper, and Tabasco.
\nPlace ham, feta, and kale evenly between the 12 muffin tins.
\nPour egg mixture over the top to fill the muffin tins.
\nBake for 30 minutes or until an inserted toothpick comes out clean.
\nCool completely then store in an airtight container, or wrap each muffin individually in plastic wrap and freeze.
\nReheat in the microwave or let thaw overnight.<\/p>\n
