It’s almost fresh zucchini season and that means lots of amazing zucchini baking. As someone who cannot have bananas making Zucchini Bread<\/a> and Coconut Zucchini Bread<\/a>\u00a0or a batch of my favourite Hearty Vegetable Soup<\/a>. \u00a0This year I have a new recipe to add to the mix – these fantastic Double Chocolate Zucchini Muffins.<\/p>\n Ingredients:<\/strong><\/p>\n 1 cup Flour<\/p>\n 1\/2 cup Unsweetened Cocoa Powder<\/p>\n 3\/4 tsp Baking Soda<\/p>\n 1\/4 tsp Baking Powder<\/p>\n 1\/4 tsp Salt<\/p>\n 1\/4 tsp Cinnamon<\/p>\n 1 cup Chocolate Chips<\/p>\n 2 Eggs<\/p>\n 1\/2 cup Vegetable Oil<\/p>\n 1 cup Sugar<\/p>\n 1 tsp Vanilla<\/p>\n 1 1\/2 cup raw grated Zucchini<\/p>\n Directions:<\/strong> Preheat the oven to 350 Put liners in a muffin tin. Stir together flour, cocoa powder, baking soda, baking powder, salt, cinnamon and chocolate chips. Whisk together the eggs, oil, sugar and vanilla until combined. Mix in the zucchini. Gradually add the dry mixture into this mixture until combined. Fill muffin tins about 2\/3 – 3\/4 full. Bake for 22-25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for a several minutes in pan before moving to a cooling rack to finish cooling.Double Chocolate\u00a0Zucchini\u00a0Muffins<\/h2>\n
