If the idea of Rhubarb Bruschetta is a little bit strange for you then just imagine your favourite combination of sweet, salty and tart and you have this fantastic appetizer. Plus, if you’re like me and have an abundance of rhubarb in the Spring/Early Summer you have plenty of rhubarb to use.
Just like a tomato bruschetta, salt is a key ingredient in this dish. The Windsor Kosher Salt brings out the flavour of the rhubarb while also helping with the pickling process. The additional sprinkle of salt to finish the dish is the final step to preparing a unique and truly delicious appetizer.
