Mint Chocolate Chip Buttercream Icing
  • 1.5 cups butter
  • 2 tbsp vanilla
  • 3 cups icing sugar (powdered sugar)
  • 1 tbsp peppermint extract
  • 6-9 drops of green food colouring (to desired colour)
  • 1 cup mini chocolate chips.
  1. In a stand mixer with the paddle attachment cream butter until creamy.
  2. Add vanilla and mix till combined.
  3. Add icing sugar cup by cup until combined.
  4. Add peppermint extract and food colouring.
  5. Mix until colour is even and frosting is light and creamy.
  6. Add mini chocolate chipsĀ and stir to combine.
