French Toast Breakfast Bake

I vaguely remember my mornings pre-kids when I would sleep in and have brunch at noon. Ah, those were the days! Now, it’s up as early as school days and two excited boys ready to take on the day. As I sleepily drink my coffee I’ve found the perfect solution to weekend breakfasts – French Toast Breakfast Bake. You can make it the night before, refrigerate overnight and pop it in the oven while you are making coffee. The result = a dish of heaven reminiscent of leisurely weekend brunches.

I’ve made this French Toast Breakfast Bake dairy-free by using Almond Breeze Vanilla Almond Beverage  and I love the slightly nutty flavour it adds to the recipe. Since it makes a 9″ x 13″ pan of breakfast bake it’s ideal for a crowd. Whether it’s for Mother’s Day, Christmas morning or any Sunday it’s easy, delicious and loved by people of all ages. Serve with pure maple syrup, and fresh fruit for the perfect breakfast.

Overnight French Toast Breakfast Bake

Ingredients: 

Cooking spray
1 loaf of crusty sourdough bread (or any white crusty bread)
8 whole eggs
2.5 cups Almond Breeze Vanilla
1/2 cup sugar
1/2 cup brown sugar
2 tbsp pure vanilla extract

Overnight French Toast Breakfast Bake

Topping:

1/2 cup all-purpose flour
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp table salt
1/2 cup cold margarine (for dairy free) or butter

Day Before Directions:

Spray 9″ x 13″ dish with cooking spray and set aside.
Cut bread into cubes and arrange in the pan.
In a separate bowl whisk together eggs, Almond Breeze, sugar and vanilla.
Pour liquid mixture over bread.
Cover and store in the refrigerator overnight.
Morning Directions:

Preheat oven to 350F
In a medium sized bowl mix together flour, sugar, cinnamon, salt and margarine (butter) with a pastry cutter or hand mixer.
Mix until mixture is crumbly and fully combined.
Sprinkle over the bread mixture and bake for 50 minutes.
Let stand 10 minutes then serve with fresh berries, margarine/butter and pure maple syrup.

    French Toast Make Ahead Breakfast Bake

    Hi and thank you for this delicious-looking recipe. Is there any substitute for the amount of sugar in the recipe? We have one diabetic in the family so I try to be sensitive to his needs when I bake. I’ve read that honey and maple syrup or applesauce can be used in baking, but I have no idea if any of those would work, or how to measure any substitute. I think I have confused myself. :-) Help please and thanks.
