15 Minute Chicken Stir Fry

Like all households dinner is often a rush.  If it’s not something I made on the weekend or defrosted from the freezer I am often left wondering what to make for the boys and I.  After a summer of simple meals on the BBQ and picnic lunches I am often stumped about what to make for dinner.  And with two hungry little boys to feed it needs to be FAST!

This recipe is a modification of a simple stir fry my mom used to make.  I loved the flavours, the simplicity of it and the healthy satisfying meal it made.  Grab some Maple Leaf Prime Chicken Strips, veggies and some pantry staples and you are ready for this meal.

15 minute chicken stir fry

15 Minute Chicken Stir Fry

1 tsp coconut oil
2 cups Maple Leaf Prime Chicken Strips
1 head of broccoli washed and cut into florets
1 cup baby carrots sliced, or 2 large carrots sliced
1 cup chicken broth
1/2 cup low sodium soya sauce
1 tbsp brown sugar
1/2 tsp minced garlic

Directions

In a wok or large frying pan heat coconut oil, add Maple Leaf Prime Chicken Strips and cook until browned. Add broccoli, carrots toss.  Meanwhile, in a small bowl whisk together chicken broth, soya sauce and brown sugar (add a little cornstarch if you’d like it thicker) then pour over the chicken and veggies.  Cover and cook for 10-15 minutes or until the veggies are soft. Serve with a side or rice.

    How much soya sauce is needed? On the recipe is just says 1/2…1/2 what?
